Perfect Firepit Recipe for Sticky Chicken and Chorizo Skewers
Serves: 8
You’re going to need;
- 100ml olive oil
- 75ml sherry vinegar
- ½ small bunch thyme
- 1½ tbsp smoked paprika
- 4 garlic cloves, crushed
- 3 tbsp honey
- 4-5 chicken breasts (about 650g), cut into bite sized chunks
- 200g chorizo ring, sliced into thick coins
- 250g padron peppers, or 3 green peppers
- Charred lemon wedges
Method;
- Whisk the olive oil, vinegar, thyme, paprika, garlic and 2 tbsp honey with black pepper. Pour ¾ of the marinade over the chicken and chorizo, keeping the rest to glaze the skewers later on. Marinate for at least 2 hrs or overnight. Whisk the leftover 1 tbsp honey into the reserved marinade.
- Thread the chicken, chorizo and peppers onto metal skewers and season with salt.
- Light your BBQ, let the flames die down and the coals turn ashy white, or heat the grill to medium high. Grill the skewers for 8-10 mins and turn every few minutes until the chicken is cooked through. Use the remaining marinade to glaze the meat when turning.
- Slide the meat and peppers off the skewers and serve. If desired add kebabs onto flatbreads.
